Chicken Orzo Soup

Chicken Orzo Soup

Serves 6

Ingredients:

  • HECK simply chicken mince.
  • 2 red onions, sliced.
  • 2 crushed cloves of garlic
  • 1 shallot, chopped.
  • 2 large, sweet potato, peeled and diced
  • 2 large carrots, peeled and sliced.
  • 1 chicken stock cube
  • 350g Orzo pasta
  • 70ml cream
  • 5 litres water
  • 300ml chicken broth
  • 2 cup frozen peas
  • Vine tomatoes (optional for garnish)
  • 2tbsp Olive oil

 

Method:

  1. Into a deep pan (with lid) on a medium heat, add oil then chicken mince and fry off until browned. Once fried off, remove from pan then set aside into a bowl.
  2. Now to the same pan, add another tbsp oil and fry off your onions and garlic until softened.
  3. Add your carrot and sweet potato, stock and 1litre then stir.
  4. Add your Orzo and chicken mince, stir well. Pop the lid on your pan and simmer for 10 minutes.
  5. Open lid and give a good stir and add you remaining water, frozen peas. Let cook for a further 5 minutes.
  6. Now add your cream and garnish (optional)
  7. Serve and Enjoy!
