Asian Pork Baoger

Serves 2

Ingredients:

  • 2 NEW Asian Pork burgers
  • Bao burger buns
  • Handful rocket
  • ½ cucumber thinly sliced
  • 1 red onion thinly sliced
  • 2 tbsp hoisin sauce
  • 2 tbsp pickled cabbage
  • 2 tbsp sriracha mayo
  • 3tbs rice wine vinegar

For the Bao buns:

  • 2 Tbsp Caster sugar
  • 1 ¼ tsp Active dried yeast
  • 200 ml warm water
  • 300 g Plain flour
  • 1 tsp Salt
  • ½ tsp Baking powder
  • 1 Tbsp Peanut oil/ or sesame oil
  • Black sesame seeds or poppy seeds to garnish

 

Method for bao buns:

 

  1. Place the sugar and yeast in a small bowl and pour over the warm water. Leave in a warm place for about 5 minutes until the yeast is frothy.
  2. Sift the flour, salt and baking powder into the bowl of an electric mixer fitted with a dough hook. Make a well in the centre of the flour and add the peanut oil. Pour in the yeast mix and mix until you have a dough. The dough should form into a soft, but not sticky, ball.
  3. Place the dough on your bench top and knead by hand until it is smooth, about 2 minutes.
  4. If necessary, wash and dry the mixing bowl, lightly oil and place the dough inside. Cover with plastic wrap and a clean tea towel and leave in a warm place to rise until the dough has doubled in size, at least 1 hour.

Divide the dough in half. Cover one half with plastic wrap and set aside. Divide one half of the dough into 3 even-sized pieces. Roll each piece into a bun shape and place on a piece of baking paper as you go, making sure they .... well apart. Lightly brush with peanut oil and seeds then cover with plastic wrap. Leave to prove for 

about 15 minutes or until they increase in size (half of their original size again).

Repeat with the remaining piece of dough.

  1. When ready to steam, get a vegetable stack steamer with enough water in it to prevent it boiling dry. Place a piece of baking paper in the base of the vegetable s steamer.

Carefully lift the first two and place in the lined steamer. Replace the lid and steam for 10-12 minutes until the buns are puffed and sound hollow when you tap the base. Carefully lift out the buns.

Repeat to steam the remaining buns.

 

Now to prepare the burger ingredients:

 

  1. Using bowl place your sliced cucumber and cover with rice wine vinegar and set aside
  2. Into the bottom of the air fryer place your onions and coat with your hoisin sauce. Cook at 200 degrees for 10/15 minutes until soft. Stir regularly.
  3. Pop burgers into a frying pan and brown off for 5 minutes on a medium to hight heat.
  4. Place burgers into the air fryer to cook for 10 minutes at 200degrees.
  5. Once all elements are ready, cut your boa buns in half and start stacking your rocket, cucumber, cabbage, burger and caramelised onion.
  6. Finish with a healthy dashing of sriracha mayo and enjoy!!
