Looking for a comforting dish to feed the whole family? Follow this recipe to make a Chicken Italia pesto stew with homemade cheesy dumplings!
Ingredients:
- 1 Pack (500g) Heck! Chicken Italia Mince
- 160g Bacon Lardons
- 1 Onion
- 3 Leeks
- 4 Celery Sticks
- 4 Tbsp Plain Flour
- 200ml White Wine
- 1ltr Chicken stock
- 3 Bay Leaves
- 190g Pesto
For the dumplings:
- 140g Butter
- 250g Self-Rising Flour
- 150g Grated Cheddar
Method
- Fry off the bacon lardons
- Whilst the bacon is frying, chop the celery, leek and onion, add to the pan with the bacon and after 10 minutes when the veg has softened add the flour
- Gradually stir in the wine and chicken stock. Add the bay leaves, cover the pan with a lid and leave to simmer
- Pan-fry the chicken mince for minutes. Add the mince to the stew and leave to simmer
- Preheat the oven to 200 degrees and make the dumplings by rubbing the butter into the flour to make a breadcrumb like texture, mix in the cheese and water to make a sticky dough
- Tear the dough into balls
- Stir the pesto into the stew and add the dumplings on top
- Pop into the oven for 25 minutes to brown the dumplings
