These Chicken Italia Enchiladas are packed with flavour and nutritious ingredients! The homemade enchilada sauce is the star of this recipe. This will definitely be a new meal time favourite.
Ingredients
- 1 pack Chicken Italia Mince (500g)
- 3 tbsp Extra Olive Oil
- 1 Jar Passata
- 2 Onions, diced
- 2 Garlic Cloves, crushed
- 1 tsp Paprika
- 1/2 tsp Chilli Powder
- 1/2 tbsp Cider Vinegar
- 1 Red Pepper, sliced
- 1/2 Fresh Red Chilli, chopped
- 1 pack Tortilla Wraps
- 100g Cheddar, grated
- 4 Spring Onions
- 3 tbsp Sour Cream
Method
- Preheat the oven to 180°C
- Heat the oil in a pan and fry off the onion along with the garlic, chilli powder and paprika
- In a different pan with a splash of oil fry off the peppers and the mince
- Once the onions have softened slightly, pour in the passata, brown sugar, cider vinegar and fresh chilli—leave this all to simmer
- Lay out the tortillas and evenly spread out the mince and peppers all over them
- Blend the passata mix till smooth
- Roll up the enchiladas and place them in am oven proof dish
- Pour over the tomato sauce, top with the grated cheese and back in the oven for 20 minutes.
To serve sprinkle over the spring onions and a dollop of Sour Cream!
