Ingredients
- HECK! Simply mince
- Sticky rice
- 200ml coconut cream
- 1tsp sesame oil
- 2tbsp peanut butter
- 3tbsp medium curry powder
- 1 lime
- 2tsp garlic paste
- 1/2tsp ginger paste
- 2tsp chilli flakes
- 2tsp soy sauce
- lettuce
- spring onions
- cucumber
For the skewers:
- Into a bowl add your mince with 1tbsp peanut butter, 1tsp garlic powder and 1tbsp curry powder. Mix well.
- Take your mixture and mould it around a skewer until it forms a sausage like shape.
- Add to the air fryer at 200 degrees for 12 minutes.
For the sauce:
Combine peanut butter, sesame oil, garlic, ginger, 1tsp chilli flakes, curry powder, 1tbsp soy sauce, 1/4 lime, salt and pepper. Mix in 100ml of coconut milk to form a paste.
For the salad:
Add chopped lettuce, cucumber and spring onion to a bowl. Add 1 tbsp soy sauce, 1tsp chilli flakes, 1tbsp sesame oil, salt and pepper.
Serve with sliced fresh chilli and a slice of lime and enjoy!
