Chorizo sausage mexican rice
A tasty one-pan meal with chorizo-style sausages, smoky rice, veggies & topped with fresh parsley.

 

Ingredients:

  • 1 x pack HECK! Chorizo-Style 97 Sausages
  • 1 x Salad Tomato, diced
  • 1 Red Pepper, diced
  • 1 Green Pepper, diced
  • 300g Long Grain Rice
  • 2 tsp Smoked Paprika
  • 1 x Large Onion, diced
  • 400ml Chicken Broth
  • 100g Sweetcorn
  • 2 tbsp of oil
  • Handful of Flat Leaf Parsley Leaves, Chopped

 

Method:

  • Heat the oil in a pan over a medium heat
  • Fry off the onion & peppers for until they soften & turn golden
  • Increase the heat then chop the sausages into the pan. Fry off, until cooked
  • Add the rice, stock, paprika and season well. Bring to the boil then stir. Cover for 20 minutes until rice is tender and the liquid has absorbed.
  • Add the tomato & corn to the pan, stir through
  • Season to taste then remove from the heat
  • Garnish with basil leaves then serve up immediately
