A tasty one-pan meal with chorizo-style sausages, smoky rice, veggies & topped with fresh parsley.
Ingredients:
- 1 x pack HECK! Chorizo-Style 97 Sausages
- 1 x Salad Tomato, diced
- 1 Red Pepper, diced
- 1 Green Pepper, diced
- 300g Long Grain Rice
- 2 tsp Smoked Paprika
- 1 x Large Onion, diced
- 400ml Chicken Broth
- 100g Sweetcorn
- 2 tbsp of oil
- Handful of Flat Leaf Parsley Leaves, Chopped
Method:
- Heat the oil in a pan over a medium heat
- Fry off the onion & peppers for until they soften & turn golden
- Increase the heat then chop the sausages into the pan. Fry off, until cooked
- Add the rice, stock, paprika and season well. Bring to the boil then stir. Cover for 20 minutes until rice is tender and the liquid has absorbed.
- Add the tomato & corn to the pan, stir through
- Season to taste then remove from the heat
- Garnish with basil leaves then serve up immediately
