Chorizo-style brunch

Method:

  1. Heat a little oil in a medium pan over medium heat. Add the deskinned sausages and crumble them into small pieces. Drizzle in the chili oil and cook for 14-16 minutes, stirring occasionally, until crispy.

  2. Meanwhile, bring a pot of water to a boil. Gently lower in the eggs and cook for 6 minutes. Once done, transfer to an ice bath to stop the cooking.

  3. In a separate pan, fry the halloumi until golden and crispy.

  4. While the halloumi cooks, place the hash browns in an air fryer at 200°C for 10 minutes. Once crispy, drizzle with hot honey.

  5. Toast the sourdough slices. Once ready, layer with mashed avocado, followed by halloumi, chorizo, hash browns, and finally, a peeled soft-boiled egg.

  6. Season with salt, pepper, and an extra drizzle of chili oil.
