Serves 2
Ingredients:
- 6 meat-free sausages
- 1 pepper, deseeded and diced
- ¼ cucumber, diced
- 1 cup rocket
- ½ red onion, finely sliced
- 1 vegetable stock cube
- 200g cous cous
- ½ pomegranate seeds
- ½ lime
- 8 cherry tomatoes, halved
- 2 tbsp honey
- 200ml boiling water
Method:
Start by adding the cous cous and vegetable stock cube to a large bowl. Pour in the boiling water, stir to dissolve the stock cube, cover the bowl with foil, and set it aside to allow the cous cous to absorb the water.
Next, heat 1 tablespoon of oil in a large frying pan over medium heat. Add the meat-free sausages to one side of the pan and the sliced onion to the other. Fry for about 7 minutes, turning occasionally. Drizzle the honey over the sausages and onions, allowing them to caramelize for another minute.
While the sausages and onions are cooking, uncover the cous cous and give it a good stir to fluff it up. Mix in the diced pepper, cucumber, halved cherry tomatoes, and rocket until everything is well combined.
To serve, plate up the cous cous salad and top it with the sticky onions and sausages. Garnish with pomegranate seeds and a squeeze of lime juice. Enjoy!
