Serves 5
Ingredients:
For the green sauce:
- 1 cup spinach
- 6-7 Basil leaves
- 3 tbsp olive oil
- 1tbsp rice wine vinegar
- 1 avocado
- 2tbsp lemon juice
- ½ cup fresh chives
- Salt and pepper to season
Remaining ingredients:
- Simply chicken chipolatas
- 450g orzo pasta
- 1 vegetable stock
- Fresh mint leaves to garnish
- ½ cup toasted almond shavings
- 1 cup peas
- 1 large mozzarella
Method:
- Add all the ingredients for the sauce into a blender and blend together until mixture is smooth. Season with salt and pepper to taste.
- Fill a pan with boiling water and a vegetable stock and add your orzo pasta.
- Boil on low/medium heat for 10/15 minutes until soft.
- Add your sausages to the air fryer and cook at 200 degrees for 10 minutes until starting to Golden.
- Once your orzo is ready, drain add peas then set aside to cool.
- Cut your sausages into 4 with a slant to create a nice shape
- Add your green sauce to orzo and peas and mix well.
- Dish up the orzo and garnish with pieces of mozzarella, almonds, sausages and mint leaves.
- Season with salt and pepper to taste and serve!
