These lettuce wraps are light, fresh & full of flavour, meaning you can enjoy delicious food minus the guilt!
Ingredients
1 pack of HECK Chicken, Minted Pea & Spinach Mince
Twin pack of Little Gem Lettuce
1-2 Large Carrots (size depending), finely sliced or grated
2tbsp of Pomegranate Seeds
100g Feta Cheese
50-75g Green Basil Pesto Sauce
Olive Oil
Method
- Into a large hot frying pan, add in some olive oil and the HECK mince and break up using a wooden spoon into small pieces
- Wash the little gem lettuce leaves and pat dry with kitchen roll before placing onto a plate or serving board
- Slice up the carrot(s) into thin strips
- Add about a tablespoon of mincemeat to the lettuce leaves, top with the carrot strips, crumbled feta cheese and pomegranate seeds. Drizzle with the basil pesto to finish for a fresh and tasty lunch option or a summer sharing plate
