Ingredients:
· 2 HECK! Smoky Pork Rashers, chopped into thin slices
· 1 tsp oil
· 2 eggs, beaten
· 1 spring onion, sliced
· 4-5 mushrooms, sliced
· 1 tomato, diced
· Chilli flakes (optional)
Method:
· Heat the oil in a frying pan and add the pork rashers and mushrooms, stirring occasionally. Next add the diced tomatoes and spring onion and cook for a further minute.
