HECK Hallowiener Sausages with Monster Mash & Beans

Do the Monster Mash this Halloween. Using sliced olives and chives to make a fun face, you can easily transform a scoop of regular mash into a monster accompaniment to some spooky sausages. Plate up with home-made baked beans - they’re a brilliant way to boost children’s veg intake without them even realising, and they taste heaps better than the tinned version.

 

Serves 4 / preparation time 20 mins / cooking time 30 mins

 

8 Heck Hallowiener sausages

80g red onion

100g leek

1 400g tin chopped tomatoes

2 tbsp BBQ sauce

125g baby spinach

1 tin cannellini beans

 

To serve: enough mashed potato for four and sliced black olives and chives to decorate.

 

To make the baked beans, finely chop the red onion and slice the leek.  Cook in a saucepan with a few spritzes of lo-cal oil over a medium heat until soft.  Add the chopped tomatoes and BBQ sauce, reduce the heat and leave to simmer for 10-15 minutes. 

 

Now add the spinach leaves and stir into the sauce letting the leaves wilt.  At this point blitz the sauce using a stick blender, and then add the beans.  Cook for a further 5 minutes so the beans are hot through.

 

Cook the sausages according to the packet instructions and serve up with the baked beans and mashed potato.  Add olives, chives etc to create ghostly faces as required…. and finish off with some pumpkin pie for pudding!
