Hot cross bun scotch egg


Serves: 2-4

Ingredients:

  • 1 pack HECK Hot Cross Bun Burgers
  • 4 eggs
  • 2 hot cross buns
  • 1 cup plain flour
  • 2 Tbsp American mustard
  • 2tbsp mayonnaise
  • 1tsp wholegrain mustard
  • Handful pea shoots to garnish

Method:

1.        Preheat the oven to 200°C. Slice the hot cross buns in half and toast them in the oven until crispy. Once cooled, blend them into fine breadcrumbs and set aside.

2.        Bring a small pan of water to a boil and cook two eggs for 6 minutes. Transfer them immediately to a bowl of ice water to stop the cooking process. Once cooled, peel off the shells.

3.        Prepare three bowls: one with whisked eggs for an egg wash, one with flour, and one with the hot cross bun breadcrumbs.

4.        Flatten a hot cross bun burger on a sheet of parchment paper. Lightly coat a boiled egg in flour, then place it in the centre of the flattened burger. Carefully wrap the meat around the egg, ensuring it’s fully enclosed.

5.        Roll the scotch egg in flour, dip it into the egg wash, and coat it with the hot cross bun breadcrumbs. For extra crunch, dip it back into the egg wash and coat with breadcrumbs again. Repeat the process for the second egg.

6.        Place the scotch eggs in an air fryer at 200°C and cook for 20 minutes until golden and crispy.

7.        Mix your mustards together to create a nice dipping sauce.
