HOT HONEY SAUSAGE & AVO TOAST

Serves 2

 

The ultimate sweet and salty brunch recipe, hot honey sausages, smashed avo and gooey soft boiled eggs, served on top of a lightly toasted seeded loaf.

 

INGREDIENTS

2 slices seeded bread

4 Heck pork 97% chipolatas

2 medium avocados

2 golden yolk eggs

2 tbsp honey

1/2 tsp chilli flakes

 

METHOD

 

  1. Place the sausages under a hot grill and cook for 12 minutes, turning half way until browned all over.
  2. Meanwhile, mash the avocados and season well with salt and black pepper.
  3. Place eggs into a pan of boiling water and simmer for 6 minutes. Drain and then run under cold water. Peel off the shells and set aside.
  4. Toast the bread and place onto a serving plate, top with the mashed avocado, gooey soft boiled egg and the grilled sausages.
  5. Mix the honey and chilli flakes together and gently heat in the microwave for 10 seconds until honey has loosened. Drizzle over the sausages and enjoy!
