Ingredients:
- 2 eggs
- 4 Smokey Chicken Sausage Rasher
- 2 large hashbrowns
- 2 tbsp crumbled feta
- 2 tsp honey
- 2 tsp chili flakes
- Handful of rocket
- Salt and pepper, to season
- 1 avocado, smashed
- 1 tbsp oil
Method:
- Cook the Hashbrowns:
- Place the hashbrowns in the air fryer at 180°C for 10-12 minutes until golden brown.
- Cook the Chicken Rashers:
- Heat the oil in a pan over medium heat.
- Add the chicken rashers and fry for 6-7 minutes, turning occasionally, until they are crispy.
- Scramble the Eggs:
- Crack the eggs into a small pan over medium heat.
- Stir continuously until the eggs scramble and are fully cooked.
- Season with salt and pepper.
- Assemble the Loaded Hashbrowns:
- Place the cooked hashbrowns on a plate.
- Spread the smashed avocado evenly over the hashbrowns.
- Top with the scrambled eggs.
- Place the chicken rashers on top of the eggs.
- Add a handful of rocket on top.
- Garnish and Serve:
- Sprinkle the crumbled feta over the rocket.
- Drizzle with honey and sprinkle with chili flakes.
- Season with additional salt and pepper if desired.
