Ingredients:
- 4 HECK! Smoky Chicken Sausage Rashers
- 2 eggs
- Handful of rocket
- 2 tbsp balsamic glaze
- 2 XL hashbrowns
- 2 sprigs of vine tomatoes
- Sesame seeds, for garnish
- 1 avocado, halved and sliced
- 1 tbsp oil
Method:
- Place the hashbrowns in the air fryer and cook at 200°C for 15 minutes.
- Add the vine tomatoes to the air fryer during the last 5 minutes of cooking time.
- Heat the oil in a large frying pan. Add the rashers and eggs, frying them for 3–5 minutes, depending on how runny you like your yolks.
- Assemble each hashbrown by layering the rocket, avocado slices, fried egg, rashers, and roasted tomatoes.
- Sprinkle sesame seeds over the egg and avocado for added texture and flavor.
- Finish with a drizzle of balsamic glaze for a touch of sweetness.
