Loaded Rasher Hashbrown

Serves 2

Ingredients:

  • 4 HECK! Smoky Chicken Sausage Rashers
  • 2 eggs
  • Handful of rocket
  • 2 tbsp balsamic glaze
  • 2 XL hashbrowns
  • 2 sprigs of vine tomatoes
  • Sesame seeds, for garnish
  • 1 avocado, halved and sliced
  • 1 tbsp oil

Method:

  1. Place the hashbrowns in the air fryer and cook at 200°C for 15 minutes.
  2. Add the vine tomatoes to the air fryer during the last 5 minutes of cooking time.
  3. Heat the oil in a large frying pan. Add the rashers and eggs, frying them for 3–5 minutes, depending on how runny you like your yolks.
  4. Assemble each hashbrown by layering the rocket, avocado slices, fried egg, rashers, and roasted tomatoes.
  5. Sprinkle sesame seeds over the egg and avocado for added texture and flavor.
  6. Finish with a drizzle of balsamic glaze for a touch of sweetness.
