Ingredients:
- 4 HECK meat-free chipolatas
- 1 pack halloumi, diced
- Drizzle of hot honey
- 2 slices sourdough
- 3 eggs
- Dash of milk
- 1 tsp garlic
- 1 tsp chives
- Pinch of salt and pepper
- 1 large avocado
- 250g piccolina tomatoes
Method:
1) Heat a large frying pan over medium heat and add the diced halloumi. Cook until the moisture evaporates, then push it to one side and add the meat-free sausages. Drizzle hot honey over the halloumi and continue cooking until everything is golden brown.
2) In a separate pan, whisk the eggs with milk, garlic, chives, salt, and pepper. Cook over low heat, stirring continuously, until you reach your preferred scrambled egg consistency.
3) While the eggs cook, place the tomatoes in an air fryer at 180°C for 10 minutes (or roast them in the oven at 200°C for 15 minutes). Toast the sourdough slices, then smash the avocado on top.
4) To assemble, layer the scrambled eggs over the avocado, then add the sausages, roasted tomatoes, and halloumi. Serve immediately and enjoy your delicious meat-free sourdough brunch!
