Meat-free winter salad

Ingredients:

  • 6 Meat-free sausages
  • 4 tbsp Pomegranate seeds
  • 300g Sprouts
  • ½ cup Walnuts, quartered
  • 1 red apple
  • 6 rashers Quorn bacon
  • Winter Salad leaves
  • 1 tbsp honey

For the dressing:

  • 1 tsp Wholegrain mustard
  • 1 tsp Dijon mustard
  • 1 tbsp Rice wine vinegar
  • 1 tbsp Honey
  • 6 tbsp Sunflower oil

Method:

  1. Cut the sprouts in halves and pop them into the air fryer at 200°C for 15 minutes. After 10 minutes, drizzle with honey.
  2. Heat a pan on medium and cook the sausages and bacon until golden brown.
  3. In a small bowl, mix together the wholegrain mustard, Dijon mustard, rice wine vinegar, honey, and sunflower oil for the dressing. Set aside.
  4. On a large serving plate, layer the winter salad leaves, walnuts, and pomegranate seeds.
  5. Slice the sausages in halves and chop the bacon into small pieces. Place them over the salad.
  6. Top with the honey-glazed sprouts and drizzle with the dressing.
