This colourful, flavoursome dish is a delicious solution to those left over ingredients in your fridge.
Ingredients
- Chicken, Red Pepper & Feta Burgers
- 360g New Baby Potatoes
- Rocket Leaves
- ½ Red Cabbage
- ½ White Cabbage
- 2-3 Carrots depending on size
- 1 Lemon
- 2 Sprigs of Spring Onion
- Mayonnaise
- Salt & Pepper to season
- Olive Oil
Method
- In a large hot pan, cook your HECK burgers with a little oil until golden brown and cooked all the way through. Whilst cooking, prepare your burger plate
- In a separate pan with boiling water, add in the baby potatoes, cut some in half if they are a little big, this will help them cook quicker. Cook for around 8-10 minutes or until softened. Drain the water and set aside
- Using a grater, or a large sharp knife, grate up the cabbages and carrots - You can mix in some mayonnaise at this point to make a more traditional creamy slaw or serve it on the side with a squeeze of fresh lemon
- On a large plate, add on the cooked HECK chicken burger, slaw, baby potatoes with chopped spring onion & olive oil & seasoning, serve with fresh rocket and a squeeze of fresh lemon or lime for a refreshing light meal
- Serve and enjoy!
