Super simple traybake pork Italia sausages with mixed vegetables, pesto, mozzarella and crispy ciabatta croutons.
Ingredients
- 2 tbsp olive oil
- 1 x pack Heck pork Italia sausages
- 1 red onion, sliced
- 1 courgette, cut into rounds
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 150g plum tomatoes, halved
- 1 ciabatta roll
- 1 x 125g mozzarella ball
- 2 tbsp green pesto
Method
- Preheat the oven to 180°C
- Spread the red onion, courgette, peppers and tomatoes onto a large baking tray, drizzle with a tbsp of olive oil and bake for 20 minutes.
- Meanwhile, place a large frying pan onto a medium heat, add a drizzle of olive oil and fry the sausages for 12-15minutes until browned and cooked through.
- Cut the ciabatta into small cubes, drizzle over a tbsp of olive oil and some salt and pepper and stir to coat all the pieces.
- After 20 minutes in the oven, remove the tray, arrange the cooked sausages over the top, tear over the mozzarella, scatter the ciabatta pieces and drizzle over the pesto. Place back in the one for 5-10 mins until cheese has melted and ciabatta is crispy. Serve straight away.
