The perfect breakfast combination, oven baked croissants stuffed with our pork Italia sausages, scrambled egg, sun-dried tomatoes, grated mozzarella and fresh basil.
Ingredients
- 1 pack Heck! Pork Italia Sausages
- 2 large croissants
- 2 large eggs
- Knob of butter
- 2 Pork Italia sausages
- 4 sun-dried tomatoes, drained of oil
- 30g grated mozzarella
- Handful fresh basil leaves
Method
- Preheat oven to 180°c and preheat the grill to a medium heat.
- Cook the sausages under the preheated grill, turning regularly until browned and cook through.
- Meanwhile add a knob of butter to a small non stick saucepan on a medium heat. Once the butter has melted, reduce the temperature to low and pour in the eggs. Use a large spoon or spatula to stir the egg until just cooked but still a little gooey, then remove from the heat.
- Chop the sun-dried tomatoes and cooked sausages into small pieces then stir through the scrambled egg.
- Cut two croissants down the middle and place on an oven tray. Begin to fill both croissants with the mixture. Top both with grated mozzarella and bake in the oven for 5-6 minutes until the cheese has melted.
- Serve with some fresh basil leaves torn over.
