Serves 1-2
Ingredients:
- 2 HECK chicken rashers
- 300g cottage cheese
- ¼ cup plain flour
- 2 eggs
- Salt, pepper, garlic to season
- ¼ red and yellow pepper, diced
- ¼ onion, thinly sliced
- 50g grated mozzarella
- 2 tbs BBQ sauce
- Handful rocket
Method:
- Pre heat oven to 200 degrees.
- In a medium bowl, mix your cottage cheese, flour, eggs and seasoning.
- On a large tray lay out some parchment paper and pour your mixture into the centre and spread into a circle base. Place in the oven for 15-20 minutes until golden brown.
- Whilst that’s cooking, pop a small pan on medium heat, add a little oil and add 2 Rashers and cook for 3-5 minutes turning over halfway.
- Assemble the pizza by adding your BBQ sauce, cheese, peppers, onions and your chopped up Chicken Rashers.
- Place back in the oven for 10 minutes.
- Finish with your rocket and slice!
