Protein packed Pizza

Serves 1-2

Ingredients:

  • 2 HECK chicken rashers
  • 300g cottage cheese
  • ¼ cup plain flour
  • 2 eggs
  • Salt, pepper, garlic to season
  • ¼ red and yellow pepper, diced
  • ¼ onion, thinly sliced
  • 50g grated mozzarella
  • 2 tbs BBQ sauce
  • Handful rocket

Method:

  1. Pre heat oven to 200 degrees.
  2. In a medium bowl, mix your cottage cheese, flour, eggs and seasoning.
  3. On a large tray lay out some parchment paper and pour your mixture into the centre and spread into a circle base. Place in the oven for 15-20 minutes until golden brown.
  4. Whilst that’s cooking, pop a small pan on medium heat, add a little oil and add 2 Rashers and cook for 3-5 minutes turning over halfway.
  5. Assemble the pizza by adding your BBQ sauce, cheese, peppers, onions and your chopped up Chicken Rashers.
  6. Place back in the oven for 10 minutes.
  7. Finish with your rocket and slice!
