Rigatoni pasta with simply chicken sausages
Serves 4
Ingredients: Fresh or Frozen vegetables
- 1 pack Heck simply Chicken chipolatas
- 2 onions
- 3 Carrots
- 2 Red peppers
- 1 large, sweet potato
- 1 small Cauliflower
- 220g Tomatoes
- 150g Celery
- 120g Broccoli
- 1 tbs garlic paste
- 500ml Chicken bone broth
- Tbs Mascarpone
- Tbs parmesan
- 300g rigatoni pasta
Method:
- Heat a tablespoon of oil in a large pan over medium heat.
- Add all your sliced vegetables and garlic paste, cooking for a few minutes.
- Pour in the chicken bone broth and bring it to a boil. Let it simmer for 20-30 minutes until the vegetables are soft, stirring occasionally.
- Transfer the cooked vegetables into a blender and blend until smooth
- Once smooth, add in the mascarpone and parmesan cheese, and blend until fully combined
- In the same large pan, add hot water to the remaining broth and cook your pasta according to the instructions
- Heat a splash of oil in a frying pan over medium heat.
- Slice your sausages into small pieces, add them to the frying pan, and cook for 8-10 minutes.
- Once the pasta is cooked, drain the water, saving a cup of it for later if need.
- Return the pasta to the large pan, add in the pasta sauce, and mix until well combined. Stir in the cooked sausages.
- Plate up and enjoy!
