Rigatoni pasta with simply chicken sausages

Rigatoni pasta with simply chicken sausages

Serves 4

Ingredients: Fresh or Frozen vegetables

  • 1 pack Heck simply Chicken chipolatas
  • 2 onions
  • 3 Carrots
  • 2 Red peppers
  • 1 large, sweet potato
  • 1 small Cauliflower
  • 220g Tomatoes
  • 150g Celery
  • 120g Broccoli
  • 1 tbs garlic paste
  • 500ml Chicken bone broth
  • Tbs Mascarpone
  • Tbs parmesan
  • 300g rigatoni pasta

Method:

  1.   Heat a tablespoon of oil in a large pan over medium heat.
  2.  Add all your sliced vegetables and garlic paste, cooking for a few minutes. 
  3. Pour in the chicken bone broth and bring it to a boil. Let it simmer for 20-30 minutes until the vegetables are soft, stirring occasionally.
  4. Transfer the cooked vegetables into a blender and blend until smooth
  5. Once smooth, add in the mascarpone and parmesan cheese, and blend until fully combined
  6. In the same large pan, add hot water to the remaining broth and cook your pasta according to the instructions
  7. Heat a splash of oil in a frying pan over medium heat.
  8. Slice your sausages into small pieces, add them to the frying pan, and cook for 8-10 minutes.
  9. Once the pasta is cooked, drain the water, saving a cup of it for later if need.
  10. Return the pasta to the large pan, add in the pasta sauce, and mix until well combined. Stir in the cooked sausages.
  11. Plate up and enjoy!
