SAUSAGE AND EGG BRUNCH BAP

Serves 1

A super quick easy brunch recipe. Stacks of our pork chipolatas topped with a silky omelette and chilli sauce!

INGREDIENTS

3 Heck 97% pork chipolatas

2 free range eggs

15g cheddar cheese

1 tsp olive oil

Chilli sauce

1 brioche bun

 

METHOD

 

  1. Place a large dry frying pan on a medium-high heat. Add the sausages to the pan and cook until browned all over, slice each sausage down the middle and flatten into a butterfly shape.
  2. Halve 1 brioche-style burger bun, toast the bun in the pan until golden.
  3. Spread the bun base with the chilli sauce (if using) and top with the sausages.
  4. Crack 1 egg into a bowl and beat with a fork. Carefully wipe out the pan and place back on the heat. Drizzle in 1 teaspoon of olive oil, then pour in the egg, tilting and swirling the pan, so the egg covers the base. Grate over the cheddar cheese, then remove the pan from the heat and use a spatula to carefully flick in the sides of the egg until it's all folded into a perfectly silky omelette.
  5. Place the omelette on top of the sausages, drizzle with more chilli sauce of desired and tuck in!
