Add a splash of colour to the dinner table! Pack your peppers with Mexican flavours - our seasoned chicken mince, veggies, beans, cheese & rice. Spice it up with an extra sprinkle of chilli.
Ingredients
- 1 pack Simply Chicken Mince (500g)
- 2 tbsp Oil
- 250g Brown rice
- 4 Red peppers
- 1 White onion (Diced)
- 1 Garlic clove (Crushed)
- 1 tsp Paprika
- 1 tsp Chilli powder
- 100g Cherry tomatoes (Halved)
- 1 tin Sweet corn
- 1 tin Black beans
- 100g Cheddar (Grated)
- 4tbsp Sour cream
Method

Preheat the oven to 180°C and bring a pan of water to the boil

Heat the oil in a pan and fry off the mince

Throw onion, paprika, chilli powder, tomatoes, sweetcorn and black beans into the mince

Wash the rice in a sieve then place into the boiling water for 10 mins

Half and deseed the peppers then place in a oven proof dish, drizzle with oil and a little twist of salt and pepper

Drain the rice and add in the mince mixture, stir this all well

Evenly divide the mince into the peppers and top with grated cheese.

Bake in the oven for 20 minutes
