This pasta salad is loaded up with chunks of simply chicken mince and onions, all tossed together with feta. Perfect for a BBQ or a picnic!
Ingredients
- 1 pack Simply Chicken Mince (500g)
- 500g Spinach
- 2 tbsp Oil
- 300g Fuseli pasta
- 20g Butter
- 2 Red Onions (sliced)
- 30g Feta
- 4 tbsp Olive oil
- 2 tbsp White wine vinegar
- 1 Garlic clove (crushed)
- 2 tsp Soy sauce
- 1 tsp Wholegrain mustard
- Salt & pepper
Method

Bring a pan of lightly salted and oiled water to the boil

Heat the oil in the pan, with half the butter and sweat the onions

Remove the onions from the pan and throw in the mince

Add the pasta to the pan of boiling water

Combine the oil, vinegar, soy sauce, mustard and garlic in an air tight jar and shake well to emulsify the dressing

Remove the mince and add to the bowl of onions, throw the spinach into the pan to wilt along with the other half of butter

Drain the pasta and add to the pan with the spinach once wilted, throw in the mince and onions also

Toss everything together and then crumble over the feta and drizzle over the dressing.
