· 1 pack (500g) Simply chicken mince
· 3 tbsp Extra olive oil
· 1 White onions(diced)
· 2 peeled and chopped Carrots
· 2 Celery Sticks chopped Celery sticks
· 3Garlic Cloves minced
· 1 tsp Oregano
· 1 tsp Thyme
· 1 can Chopped Tomatoes (400g)
· 3 tbsp Tomato puree
· 300ml Chicken stock
· 3 large Potatoes (peeled and chopped)
· 2 Sweet Potatoes (peeled and chopped)
· 400g cauliflower
· 25g Butter
· 3 tbsp Double cream
Method
1. 1.Preheat the oven to 180°C
2. 2.Heat the oil in a pan and begin to sweat off the onions until translucent, then go in with the mince
3. 3.Bring a pan of boiling water to the boil
4. 4.Throw the carrots, celery, garlic, chilli flakes and herbs into the pan with the onions
5. 5.Add the potatoes to the pan of boiling water—keep an eye as when nearly soft throw in the fleurettes of cauliflower for the final 5 mins
6. 6.Once the vegetables have softened slightly add in the chicken stock, tomato puree and chopped tomatoes
7. 7.Leave the mince to simmer and infuse with all the flavours
8. 8.For the mash, drain the potatoes and cauliflower then add in the butter and cream to mash
9. 9.Begin the assemble—pour the mine mix into the bottom of an oven proof baking dish and top with the mashed potato
10. 10.Bake in the oven for 35 minutes until the top is crisping and the mince is bubbling at the sides.
11. Garnish with basil and serve with some fresh or frozen veg!
