Serves 2-3
Ingredients:
- 3 HECK pork rashers
- 110g Plain flour, sifted
- Pinch of salt
- 2 eggs
- 200ml milk mixed with 75ml water
- 2 tbs oil
- Handful of fruit of your choice
- Drizzle of maple syrup
Method:
- Cook the rashers in a small pan over medium heat for 3 minutes.
- Remove from the pan and cut into small pieces.
- In a large bowl, combine the flour and salt. Make a well in the centre and crack in the eggs. Begin whisking, gradually incorporating the flour from the edges.
- Once all the liquid is mixed in, whisk again until the batter is smooth.
- Transfer the pancake batter into a pouring jug.
- Preheat a non-stick frying pan, then pour the batter in thin swirls. Cook on each side until golden brown.
- Arrange the pancake spaghetti on a plate or in a bowl, then sprinkle the cooked rashers on top.
- Serve with blueberries or your favourite fruit and drizzle with maple syrup.
