Spaghetti rasher pancakes

Serves 2-3

Ingredients:

  • 3 HECK pork rashers
  • 110g Plain flour, sifted
  • Pinch of salt
  • 2 eggs
  • 200ml milk mixed with 75ml water
  • 2 tbs oil
  • Handful of fruit of your choice
  • Drizzle of maple syrup

Method:

  1. Cook the rashers in a small pan over medium heat for 3 minutes.
  2. Remove from the pan and cut into small pieces.
  3. In a large bowl, combine the flour and salt. Make a well in the centre and crack in the eggs. Begin whisking, gradually incorporating the flour from the edges.
  4. Once all the liquid is mixed in, whisk again until the batter is smooth.
  5. Transfer the pancake batter into a pouring jug.
  6. Preheat a non-stick frying pan, then pour the batter in thin swirls. Cook on each side until golden brown.
  7. Arrange the pancake spaghetti on a plate or in a bowl, then sprinkle the cooked rashers on top.
  8. Serve with blueberries or your favourite fruit and drizzle with maple syrup.
