This Mediterranean Style Tart using our Spring Chicken Mince, topped with tomatoes, feta and mint is the perfect answer for a refreshing meal on a summer’s day. With every bite you will feel as though your sat in the sun on a Greek island! Serious Mamma Mia vibes!!
Ingredients:
- 1 Pack Spring Chicken Mince
- Puff Pastry
- 2 Garlic Cloves
- 1 Red Onion
- 1 Tbsp Tomato Paste
- 1 Tsp Ground Cumin
- 1 Lemon
- Hummus
- 150 g Cherry Tomatoes
- Feta
- Mint Leaves
Steps:
- Preheat the oven to 200 degrees
- Finely dice the onion and garlic, then pan-fry for 3 minutes on medium heat
- Add the Spring Chicken Mince and fry for 10 minutes.
- Whilst the mince cooks, roll out the pastry on a floured surface and prick the dough with a fork all over the center and roll the edges. Pop into the oven for 10 minutes on a tray lined with baking paper
- Add in the tomato paste and cumin to the pan with the mince and stir
- Squeeze the juice of the lemon into the pan and stir
- Spread the center of the pastry with hummus, add the mince mixture and top with the feta and halved cherry tomatoes. Pop back into the oven for a few minutes to warm
- Garnish with mint leaves
