Ingredients:
- 4 Heck 97% sausages, quartered
- 4 eggs
- 200ml whole milk
- 75g grated mature cheese
- 1 roll gluten-free pastry
- 1 red onion, finely sliced
- 2 tbsp sugar
- 1 small sweet potato, grated
- Salt and pepper to taste
- 1 tbsp olive oil
Method:
- Preheat the oven to 200°C (392°F).
- Line an ovenproof quiche dish with the gluten-free pastry, trimming any excess edges.
- Add baking beans or cover the pastry with foil and add rice to weigh it down.
- Par-bake the pastry in the oven for 10 minutes.
- In a frying pan, heat the olive oil and sauté the sliced onion until softened.
- Cook the quartered sausages in an air fryer at 200°C (392°F) for 15 minutes.
- Once the onions are softened, add the sugar and simmer until caramelized.
- In a jug, whisk together the eggs, milk, grated sweet potato, cheese, salt, and pepper.
- Pour the egg mixture into the par-baked pastry. Add the caramelized onions and sausage pieces, stirring gently to combine.
- Top with a sprinkle of cheese.
- Bake in the oven for 25 minutes, or until set and golden.
