Ingredients:
- ¾ pack HECK Simply Chicken Mince
- 1 extra-large sweet potato
- 150g mixed baby tomatoes
- 1 avocado
- 1 tbsp chipotle chili seasoning
- 2 eggs
- 1–2 tbsp oil
- Handful of lamb's lettuce
- Fresh lime wedges
- Optional: Sesame seeds, salt, and pepper for garnish
Method:
- Preheat the oven to 200°C.
- Slice the sweet potato into 1cm-thick rounds. Arrange them on a baking tray, drizzle with 1–2 tbsp of oil, and roast for 15–20 minutes until golden and tender.
- Heat a dash of oil in a frying pan over medium heat. Add the chicken mince and chipotle seasoning, cooking for about 10 minutes until golden brown and fully cooked.
- In a separate pan, fry the eggs to your liking.
- Slice the avocado and baby tomatoes.
- Arrange the roasted sweet potatoes on a plate as the base. Add the cooked chicken mince on top, followed by the avocado slices, fried eggs, and baby tomatoes. Add a handful of lamb's lettuce for freshness.
- Sprinkle with sesame seeds, season with salt and pepper, and finish with a squeeze of fresh lime juice.
